The prickly pear is the official state plant of Texas. Although growing throughout the American Southwest, multiple species of the prickly pear grow natively in the state’s dry climate with colorful abundance. The distinctive red, yellow, and purple flowers that proudly stem from the flat, fleshy and thorned paddles are a testimony to the state’s growth, diversity, and rugged history. The prickly pear fruit is a familiar ingredient for jelly, salsa, sorbets, and barbeque recipes. More about Texas’ state plant at http://www.texascactuscouncil.net/stateplant.php
